Edamame-Chickpea Power Salad with Avocado-Lime Dressing

INGREDIENTS :

Dressing :

  • 2 avocados, diced
  • 1 thumb of ginger root
  • 1 shallot
  • 1 lime squezed
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp maple syrup
  • 1 Tbsp olive oil
  • Half a pack chopped fresh basil

Salad Ingredients :

  • 1 can chickpeas, drained, rinsed and patted dry
  • 1 Tbsp olive oil
  • a pinch of salt
  • ¼ tsp ground cumin
  • ⅛ tsp ground cayenne pepper
  • ⅛ tsp ground ginger
  • 1 bag of cashews
  • 300g. shelled edamame, cooked
  • 3 apples, diced
  • salt and pepper to taste
  • Half a pack chopped fresh basil

METHOD (Should be done in less than 30 minutes):

  • STEP 1: Prepare dressing by placing ingredients in a high-speed blender and blending until smooth and creamy.
  • STEP 2: boil the frozen edamame for 5 minutes.
  • STEP 3: Heat a big pan over high heat. Add chickpeas and allow them to toast for about 5-8 minutes, or until they start to brown. Drizzle olive oil over the chickpeas. Add salt, cumin, cayenne pepper and ginger. Stir to coat.
  • STEP 4: Add chickpea mixture to cashews, edamame and apples in a bowl. Season to taste with salt and pepper.
  • STEP 5: Serve dressing in a seperate bowl. Garnish with chopped basil and serve warm.
