Cannellini Bean and Bacon Salad

Cannelini bean and bacon salad

INGREDIENTS :

Salad :

  • 1 pack of streaky bacon
  • 2 tins of cannellini beans, drained
  • 500g sicilian datterini tomatoes, halved
  • 50g fresh basil, leaves picked
  • 2 little gem lettuces, shredded
  • 2 avocados, diced

Dressing :

  • 50g parmesan
  • 100g mayonnaise
  • 1/2 lemon, zest and juice
  • 1 clove garlic

METHOD (Should be done in less than 30 minutes):

  • STEP 1 (BACON): Fry the bacon rashers in a big pan on high heat until they start to brown. Pat dry on a plate covered in kitchen roll (The higher the heat and the more excess fat you remove, the crispier they are going to get)
  • STEP 2 (SALAD): Wash, shred and dry the little gem lettuce and basil leaves and arrange in a big bowl.
  • STEP 3 (BEANS): Drain the 2 tins of cannelini beans and toss them in the salad.
  • STEP 4 (TOMATOES & AVOCADO): Wash and chop the tomatoes in halves and wash and dice the avocados and toss them all in the salad.
  • STEP 4 (DRESSING): Put all of the dressing ingredients in a food processor (50g parmasan, 100g mayonnaise, juice and zest from half a lemon, 1 garlic clove). When processed serve in a small bowl with a spoon.
  • STEP 5 (SERVE): Arrange the bacon on top of the salad and serve with the dressing on the side.
