Cauliflower rice with vegetables and flaked almonds

Feeds a family of 4

INGREDIENTS

Cauliflower rice :

  • 1 blended cauliflower (remove stalks)
  • 1 chicken stock cube (400ml boiling water)
  • 4 tbsp olive oil
  • Salt and pepper
  • Bag of flaked almonds
  • 1 diced red onion
  • 1 bunch of fresh basil

Vegetables :

  • A bunch of fresh asparagus, sliced
  • 2 peppers (red, orange or yellow), diced
  • A pack of mushrooms, sliced

METHOD :

  • STEP 1: Wash the cauliflower and remove the stalks. Blend the florets in a food processor until they are roughly the size of rice.
  • STEP 2: Cut the asparagus, peppers and mushrooms in bite sized pieces.
  • STEP 3: Finely dice the red onion and fry it in a bit of olive oil in a large pan for a couple of minutes. Add the cauliflower rice, a bit of salt and pepper, and roughly 1 dl of the chicken stock. Put a lid on the pan and cook on a medium heat for roughly 10 minutes. Gradually add more stock if the pan is drying out.
  • STEP 4: While the cauliflower rice is cooking, boil the vegetables in a big pan of water for 5 minutes. Dry in a colander and transfer to a dry frying pan for 2 minutes then transfer to a bowl and mix with 2 tbsp of olive oil.
  • STEP 5: Transfer the cauliflower rice mixture to the same bowl and mix in the bag of flaked almonds. Top the dish with sliced basil leaves.
