INGREDIENTS :
Dressing :
- 2 avocados, diced
- 1 thumb of ginger root
- 1 shallot
- 1 lime squezed
- 1 Tbsp apple cider vinegar
- 1 Tbsp maple syrup
- 1 Tbsp olive oil
- Half a pack chopped fresh basil
Salad Ingredients :
- 1 can chickpeas, drained, rinsed and patted dry
- 1 Tbsp olive oil
- a pinch of salt
- ¼ tsp ground cumin
- ⅛ tsp ground cayenne pepper
- ⅛ tsp ground ginger
- 1 bag of cashews
- 300g. shelled edamame, cooked
- 3 apples, diced
- salt and pepper to taste
- Half a pack chopped fresh basil
METHOD (Should be done in less than 30 minutes):
- STEP 1: Prepare dressing by placing ingredients in a high-speed blender and blending until smooth and creamy.
- STEP 2: boil the frozen edamame for 5 minutes.
- STEP 3: Heat a big pan over high heat. Add chickpeas and allow them to toast for about 5-8 minutes, or until they start to brown. Drizzle olive oil over the chickpeas. Add salt, cumin, cayenne pepper and ginger. Stir to coat.
- STEP 4: Add chickpea mixture to cashews, edamame and apples in a bowl. Season to taste with salt and pepper.
- STEP 5: Serve dressing in a seperate bowl. Garnish with chopped basil and serve warm.
