Feeds a family of 4.
INGREDIENTS :
Salad :
- 2 packs of halloumi
- 2 packs tenderstem brocolli
- 2 avocados
- 1 bag baby leaf salad
- 200g quinoa
Dip :
- 1 pot of organic houmous
Dressing :
- Olive oil
- Balsamic Vinegar
METHOD (Should be done in less than 30 minutes):
- STEP 1: Wash the 200g quinoa and place in a saucepan with 400ml of water. Bring to the boil, turn down the heat and simmer for 10 minutes. Turn of the heat and leave woth the lid on until all the water has been absorbed.
- STEP 2: Trim and boil the tenderstem brocolli for 5 minutes
- STEP 3: Slice the Halloumi and fry on a griddle pan for a couple of minutes on each side.
- STEP 4: Place the baby leaf salad in a bowl. Slice the avocado and place them on top.
- STEP 5: Mix a basic dressing of olive oil and balsamic vinegar.
- STEP 6: Serve the salad with brocolli, quinoa, halloumi, humous and dressing in individual little pots.
