Peach Slaw

INGREDIENTS :

Dressing :

  • 4 tablespoons of peanut butter.
  • 2 tablespoons white miso paste.
  • Juice from one lime fruit.
  • 1 teaspoon sesame oil.
  • A small thumb of grated ginger.
  • 2 to 5 tablespoons water, or as needed

Slaw :

  • Half a red cabbage shredded.
  • 2 peppers shredded.
  • 2 scallions, chopped.
  • Handful fresh coriander, chopped including stems
  • Handful fresh basil, chopped.
  • 1 chili pepper, sliced.
  • A handful of pumpkin seeds.
  • A handful of sesame seeds.
  • A pack of peaches, thinly sliced

METHOD :

  1. Dressing: In a small bowl, whisk together the cashew butter, miso paste, lime juice, sesame oil, and ginger. Whisk in enough water to create a drizzable consistency. Set aside.
  2. Slaw: In a large bowl, combine the cabbage, peppers, scallions, coriander, basil, chili peppers, and the dressing. Toss until combined. Add the remaining dressing, if desired, and season to taste with a few pinches of sea salt. Serve topped with the toasted seeds, and sliced peaches.
