INGREDIENTS :
- Potatoes
- Carrots
- Courgettes
- Peppers
- Okra
- Aubergine
- Olive oil
- Chopped onions
- Chopped peeled tomatoes
- Parsley
- Salt
- Pepper
- Meat
METHOD :
- Wash and slice vegetables (potatoes, carrots, courgettes, peppers, aubergines, okra) and your chosen meat into 1 cm dices.
- Fry the vegetables (and your chosen meat) in butter for 10 minutes and set aside.
- Fry the chopped tomatoes, onions and parsley and season with salt and pepper until most of the water has evaporated.
- Mix the vegetables and meat back in.
